Coffee Cupcakes with Cappuccino frosting
Dear Martha,
Kristin, a k a Vanilla Dream, in the Cookies Swap Party Society has talked for weeks about how much she’d like some coffee cupcakes. So this weekend I improved one of my favorite cupcake recipes into caffeine cupcakes. And, as Vanilla Dream has predicted, coffee is a really good flavor for cupcakes. Especially when they’re based on dark chocolate.
So if you’re only baking one thing this year Martha (which I doubt you will), let it be these tasty coffee cupcakes with cappuccino frosting. Absolutely delicious!
Coffee Cupcakes with Cappuccino frosting
200 g dark chocolate
50 g butter
2 eggs
2,5 dl sugar
1 tsk vanilla sugar
1,25 dl flour
3 msk espresso
1 krm baking powder
Cappuccino icing
100 g Philadelphia cream cheese
4 msk butter of room temperature
300 g icing sugar
1/2 dl cacao
3 msk espresso
1. Put the oven on 175° Celsius.
2. Melt the chocolate in the microwave and blend with the melted butter. Whip eggs, sugar and vanilla sugar until it turns white, and pour the chocolate mixture into the bowl. Blend flour and baking powder and pour into the mixture.
3. Fill small cupcake tins with the mixture.
4. Bake in the middle of the oven for about seven minutes.
5. Now start with the icing: Mix the cream cheese and butter with an electric whisk. Add icing sugar and cacao and stir to a nice consistency. Add espresso and keep on stir.
6. Spread the icing over the cupcakes, and, if you like, finish with sprinkles.
