Cointreau Cookies

Dear Martha,
A while ago my publisher at Parasoll Publishing House bought me a bag of almond flour (she’s really the cutest!). It’s really practical, since milling is the most boring thing about baking.
During Ascension Day I used the last of it to try a recipe of almond cookies. Since I love orange in cookies, I added orange zest and a teaspoon of Cointreau to it.
These are my Cointreau Cookies, Martha:
You’ll need
100 g almond flour
1 dl confectionary’s sugar
1 egg white
Zest from half an orange
1 tsp Cointreau
1. Preheat the oven to 180°C.
2. Mix almond flour and confectionary’s sugar in a mixer. Add half of the egg white, and if needed, the rest of it. Add the zest and Cointreau, and mix.
3. Roll about 10-15 rolls, and bake for 10-12 minutes.
